Let’s Eat Cake

Some days you just need CAKE!!!  

Since committing to eating healthy, which includes going grain and gluten free, eating many favorite things, like cake, has been tough.

Everyone knows gluten free means dry and dense right?? WRONG!! 

I have made it a mission to find ways to make my favorite things HEALTHY ... at least mostly healthy.  

Here are two of my favorite childhood cakes converted to GF, dairy free options.  The best part is, my son, who never eats 'hippie food",  didn't even know I had made healthy changes to these two family favorites.

Meet my Great Grandma Duke. This is the woman that taught me how to wear and care for my first panty hose! She was the lunch lady for Crown Hill Elementary in Seattle, WA, this was one of her staples.

Chocolate Crazy Cake

Crazy cake is a simple very quick type of cake, perfect for a weeknight cake emergency.  My first attempt I used my bundt pan that has been taking up space for 10 years!  On the glaze I used Lily's vegan chocolate chips combined with Hu baking dark chocolate gems.  The combo had just enough sweetness to make it nice and still low sugar.  

Next time I will try this using monk fruit sugar instead of organic cane. If you try it first come back and tell me how it turns out!!
